This Italian dessert is proclaimed to be originally made by the French, and then refined by the Italians. There is rum, there is orange, and then there is lemon. A cake so fresh you'd hardly believe that you are eating a cake. Best eaten absolutely chilled.

The tarta de santiago contains egg. It does not however contain any flour but uses almond paste for the base. Also, it has citric flavours as lemons, limes and oranges are incorporated into the cake.
